For me winter is all about delicious home made soups and since
coming across this recipe on Madeline Shaw’s site I have been completely
obsessed!! By obsessed, I mean it isn’t unheard of to have exactly the same
lunch for weeks.
What makes this soup beautifully creamy is the coconut milk. Coconut
milk is great for the winter months, as the fatty acids hydrate the skin and it
helps to fight off colds by maintaining a healthy immune system. Packed with
magnesium, it also helps calms the nerves and can aid with muscle cramps and
soreness – runners take note!
Ingredients
· 1 cup of water
· 4 TBSP of coconut oil
· 1 large white onion
· 1 can of coconut milk
· 3 sweet potatoes
· 1 courgette
· 2 TBSP of fresh ginger
· 3 garlic cloves
· Salt and pepper
· 1 lime
First melt the coconut oil in a large pan, add the chopped onion and
let it cook for 10 minutes on a medium heat. Whilst cooking peel and chop the
potatoes, then add into the mix. Grate the ginger, crush the garlic and chop
the courgette. Place all this in with the potatoes, before adding the coconut
milk and water. Turn up the heat to boil, and then allow to simmer for around
30 minutes. Blend the soup and to finish off add the juice of the lime and a
pinch of salt and pepper.
